Ben's mom made these for us last night.
I could blame the fact that I ate 4 of them on my current impregnated state, or I could simply blame it on how amazing these things are... either way, they are ridiculously good. And EASY. You gotta try 'em!
Resurrection Biscuits
1 can butter flavored biscuits ( we used the Publix Butter-Me-Not can of biscuits)
1 bag jumbo marshmallows
Preheat oven to required temperature on biscuit directions. Seperate biscuits and using your fingers, flatten out each disc of dough until it is about 3-4 inches wide (big enough to enclose the marshmallow). Place one marshmallow in the middle of each biscuit, then fold up the sides and seal in the marshmallow. Place on a cookie sheet and bake til golden. Eat warm.
I was told they are called Resurrection Biscuits because the white marshmallow represents Christ, the biscuit is the tomb; Christ is placed in the tomb, and then when you open up the biscuit after it has baked, Christ (or the marshmallow) has risen. I'll be using this as a visual Bible story aid in a few years I think!

OK, I tried these for breakfast this morning - Dad thought they were yummy :-} Of course in a land of no canned biscuits I had to start from scratch so a little more time consuming - but worth it! Also since the marshmallows here are about half size I think next time I'll try two in each biscuit. I did sprinkle a little cinnamon sugar inside with the marshmallow and then after sealing it in I brushed the tops with melted butter and sprinkled a little on top. Thanks to Lu Ann for sharing with us all!!
