Last night Ben and I had an impromptu dinner gathering at the house with one of Ben's co-workers and his girlfriend. I tested out a new recipe I had found on them, and I think it was a hit. A hit not only because it took less than 30 minutes, but also because we all went back for seconds. So, in the random recipe-sharing fashion of our blog, here ya go! Enjoy.
Caesar and Sliders
1 12-oz package romaine hearts
1 1-lb pack lean ground beef
2 kaiser rolls, cut into 1 inch cubes
1/3 c. mayo
3 T. fresh lemon juice
1 T. Dijon mustard
3-4 sprigs fresh thyme
1t. Texas Pete's hot sauce
1t. fajita or steak seasoning
1 t. Worcestershire sauce
4 T. olive oil
garlic powder
s&p
In a bowl, mix ground beef, worces. sauce, thyme leaves, hot sauce, fajita seasoning, and s&p. Form into 12 balls, flatten into mini patties and thread two each onto skewers, leaving 1 inch of space in between.
Preheat oven to 375. In a ziploc bag, toss cubed kaiser rolls, 2 T. of the olive oil, and a hefty dash of garlic powder, salt, and pepper. Shake to coat. Place in shallow baking dish or tray, and place in oven for 10 minutes, or until lightly toasted.
In a small bowl whisk together the mayo, lemon juice, 2 T. of olive oil, s&p, and mustard. Chop up romaine, add dressing, then toss to coat.
Grill sliders on medium heat (or in a grill pan) for 8-10 minutes.
Add croutons to lettuce. Toss. To serve, place salad in a bowl and top with 1~2 skewers.
