I love Bakerella with all there is, but without the help of a good friend and some trial and error I wouldn't have figured out half this mess. On the Bakerella site I wasn't able to find any of the hints pertaining to how to dry, coat, wrap, or display the cake pops. Or what to do when you can't find anything other than a SuperMoist cake mix (I found out pretty quickly that moist cake mix is not recommended, she uses the classic).
So here's the final method that worked for me. They were a lot of fun, and to make it even better, they tasted pretty darn good. I used lemon for these, but next time I'm doing strawberry and chocolate... Mmmmm.
Cake Pops 101
First, you bake the cake according to directions on the box. I used the SuperMoist cake mix in lemon.
Cruble cake and pulse in a food processor until it is fine crumbs.
DO NOT MIX with a whole can of cream cheese icing!!!! This results in a gooey batter that cannot be formed into balls, and looks more like the original cake batter, pre-baking. But, your father-in-law will have a lovely time spooning it out of the bowl and 'testing'. Waste not want not!
Okay, so if you can't find a classic cake mix (I went to 4 different stores. It doesn't exist.) and are using a moist one, you mix the cake crumbs with about 1/3 can of the cream cheese icing, and use your hands.
Roll into quarter-sized round balls, and place on wax paper trays. Makes about 50 cake balls.
Then insert these about 3/4 the way into the balls. Stick in freezer for 10-15 minutes. ( I actually did this after I stuck them in the freezer and it still worked great.)
Meanwhile, prep your drying racks.
Otherwise known as floral foam!
(Obviously this is not my picture, but thats the foam, that green square stuff.)
Use an extra pop stick and make holes in the foam, so you won't have to wrestle with doing it with the actual cake pops later.
I melted them in the microwave in a glass measuring cup so that it was deep enough to dip the cake pops into.
** Important! Dip cake pops all the way in until the candy melt gets on the stick.
Set the dipped cake pops into the floral foam to dry, 10-15 minutes.
Then I melted some white candy melts and dipped just the top of them, and immediately dipped them in green sugar.
After they were completely dry, I used these (also found at Michaels)
and tied them off with some ribbon.
Then I used some of the floral foam in the middle of a vase, and decorated it with some little craft foam balls before sticking the cake pops into the foam.
Oh, and don't set these outside if it's windy.
Those cute little foam balls will be in your yard, your food, your hair, your flower bed and anything else within 100 feet for the next two weeks.
Not that I would know.

Excellent! Thanks for sharing your tips...I added the full can of icing, and you're right...the end result looked like it should be cooked again! Also, I think the extra icing is what weighed down my pops and made them come off the stick - PLUS that crazy sugar smell, which just doesn't smell so good after a while!
I'll try them again soon using your tips.
Mmmm.... now I am craving them again. Their lemony-ness cannot be beat!
