Making Stuff Up

Several people, including myself, finally harassed my sister long enough.



She now has a little blog of her very own! Some of you may remember this:

It's one of the many adorable hats Kaelyn owns that Heather made for her. I gave out several as Christmas gifts too, they are just too precious for words. (I'm not exaggerating when I say we have one that matches every outfit. What is fashion without accessories!)

I know next to nothing about crocheting, knitting, quilting, all that beautiful stuff, but from what others have said, my baby sis is kinda talented, and I'm all for tooting her horn.
I can't make cute things (well, other than babies) but I make edible things.
Which explains a lot now that I think about it.
Last night I had some tilapia that needed to be used, so I attempted to make fish tacos, Baja-style, with what we had in the kitchen. They turned out pretty tasty- here's the recipe!
White Fish Tacos (hardy har har)
3-4 Tilapia fillets (you could use any white, flaky fish)
1 packet taco seasoning (we had Trader Joe's)
1~2T Canola or Vegetable oil
6 tortillas (we had flour)
1/2 Napa cabbage head, leaf only, not the white stem part (you could use regular, we just had this left over from Oriental we had the evening before, and I like it because it doesn't have as strong of a cabbage flavor)
1/2 serrano pepper, seeds removed, minced
Juice of 1/2 lime
1/4 c. Cilantro, chopped
pinch salt
3/4 c. Mayo.
Sprinkle taco seasoning over both sides fish. Heat 1~2T oil in large skillet over medium-high heat. Add fish, cook just until done, flipping half way through.
Meanwhile, shred or finely chop cabbage, and add in a bowl with the lime juice, pepper, cilantro, salt, and mayo. Stir.
Heat tortillas in fry pan. Cut fish in half lengthwise, and place in tortillas then top with a generous amount of cabbage mix.
Makes 6 tacos.
We had it with Cuban-style black beans (also Trader Joe's -YUM!).
