Easy Breezy

Nothing exciting to post, but I did want to share this:
As much as I love to cook, I have recently discovered how much time it takes out of my day- especially with a long commute and trying to fit in time for Lost, American Idol, and training for the 13.1. I'll save the fun yet time consuming recipes for the weekends. So my latest quest is to find great recipes that I can throw together when I get in from work. This is my current favorite:

Brown Butter Tortellini

1 family-size package Three Cheese Tortellini
1 large red bell pepper, diced
1 8oz. ham steak (we use chicken sometimes too), chopped
1 10oz. bag fresh baby spinach
1/4 cup unsalted butter

Brown butter in a large pan while you are boiling the tortellini in salted water. Place spinach in collander. Add red bell pepper to browned butter and reduce heat to low. Add ham or chicken. Drain tortellini over spinach in collander. Shake to remove excess water. Add this to the pan of butter and peppers. Toss. Top with fresh grated parmesan, s&p.
Simple, fresh, all in under 25 minutes.
Now that is good time management!

Could you do this with olive oil? To be a little bit lighter? Sounds DELICIOUS...
